Mexican Street Corn Salad Cups
Delightful salad cups inspired by the traditional Mexican street food elote, bursting with vibrant flavors of grilled corn, lime, and cheese.
INSTRUCTIONS
- 1 Husk the corn and remove all silk.
- 2 Boil a large pot of water.
- 3 Add the corn to the boiling water and cook for 5-7 minutes until tender.
- 4 Remove the corn from the water and allow it to cool.
- 5 Cut the kernels off the cob and place them in a large mixing bowl.
- 6 Add the mayonnaise, cotija cheese, chili powder, lime zest, and lime juice to the bowl.
- 7 Mix well until all the ingredients are combined.
- 8 Season with salt and pepper to taste.
- 9 Fold in the chopped cilantro gently.
- 10 Spoon the mixture into individual cups for serving.
