High Protein Lemon Cottage Cheese Pudding
A creamy, refreshing pudding made with cottage cheese and lemon for a healthy dessert or snack.
INSTRUCTIONS
- 1 Gather all ingredients and equipment. Wash and dry your lemon, measure out cottage cheese, honey, and vanilla.
- 2 Zest the lemon using a microplane or fine grater, avoiding the bitter white pith. You want about 1 tablespoon of zest.
- 3 Juice the lemon and strain out seeds. Measure 2 tablespoons of juice.
- 4 Add cottage cheese to a blender or food processor. Blend on high for 1-2 minutes until smooth and creamy, scraping down sides as needed.
- 5 Add lemon juice, lemon zest, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend again for 30-60 seconds until glossy and pale yellow.
- 6 Taste and adjust: add more zest for extra lemon flavor or more honey if too tart. Blend a final time.
- 7 Divide pudding into serving bowls or glasses. Chill in the fridge for 30 minutes for best texture (optional).
- 8 Serve cold, topped with fresh berries, extra zest, or nuts as desired.
